Fantôme Farm Fantôme Farm, Wisconsin's oldest artisan farmstead goat cheese producer, takes pride in its heritage of fresh goat milk cheeses. Fantôme Farm Fresh Chevre is available plain and flavored; Chevre Provencal is crafted using a time-honored process that includes hand forming chevre logs and marinating in extra virgin olive oil with herbes de Provence. Fantôme Farm Chevre with Ash is coated with a mixture of salt and edible ash. Fleurie Noir is a new, award-winning bloomy-rind cheese hand-ladled into forms, dusted with ash and salt, and then allowed to age for several weeks.
