Brunkow Cheese of Wisconsin Brunkow, one of Wisconsin's oldest operating cheese plants, has been making cheeses since 1899. The fourth generation makes a variety of cheese from the milk of 30 southwestern Wisconsin dairy farmers. With a long history in traditional Wisconsin varieties, Brunkow recently turned its talents to small-batch, handcrafted artisan originals. Little Darling carries an earthy and complex flavor, created by the wild molds formed during cellar aging. Pendarvis starts with raw cow's milk and finishes with cellar aging, resulting in a thin rind, delicate citrus flavor and firm body.
